Iron Mate D's Drunken Flap Steak Roast with Gunpowder Spice Rub
What is Flap steak? Flap steak is a poor man's flank. The meat is slightly tougher than the flank
so the best way to serve flap steak is at rare or medium rare, which is exactly what Chef Darryl did at the BBQ.
The great thing about grilling is once you are done with the marinade, when it comes to cooking,
you just throw it on the grill and let your men-barbarian instincts tell you when the meat is ready to eat! Not much instructions there. Or is there?
Ingredients:
1 Pcs. 2 llb Flap Steak
Citrus Beer Marinade
3 Cans of Beer (preferrably domestic beer like Coors or Miller)
2 Navel Oranges
3 Cloves of Garlic
Flaming Spice Rub
2 tablespoons dark brown sugar
1/4 teaspoon Ground Cumin Powder
1/4 teaspoon Chipotle Chili Powder
1/4 teaspoon Ancho Chili Powder
1/5 teaspoon Garlic Powder
1/2 teaspoon Paprika
1/2 teaspoon dried oregeno flakes

Caribbean Rum Smoked Salmon
According to
Judge Willma at the event, this dish was one of Chef Darryl's weaker dishes of the day. After the event,
Chef Darryl was interviewed and strongly disagreed with the
judge's comment. Personally, I thought this dish was a great success!
Ingredients:
4 llbs of salmon
5 liberal splashes of Baccardi Limon or O (until the salmon is submerged)
Brown Sugar Cure:
2 cups of Brown Sugar
2 tablespoons of kosher salt
1/2 teaspoon of ground black pepper
